Afternoon Tea menu: Cucumber sandwiches

One of the most popular sandwiches at afternoon tea is without a doubt the cucumber sandwich. Traditional, British, and all round yummy, it is one of the easiest sandwiches you can make at home. It’s great because it is suitable for vegetarians, cheap and is an all round crowd pleaser.

Here is a photograph of my cucumber display where I served it with a delicious Earl Grey tea. Note that you can have some open sandwiches as well which really adds to the wow factor of your display.

Cucumber sandwiches with lemon herb butter

The recipe below will make 9 finger sandwiches

You will need:

50g butter, softened (or cream cheese if you prefer)

1/2 teaspoon finely grated lemon rind

2 teaspoons chopped fresh dill

1.5 teaspoon chopped fresh chives

6 large slices brown bread

2 small cucumbers, peeled.

Method

  • Combine butter, lemon rind, dill and chives in a small bowl and season

  • Spread 1 side of each bread slice with butter mixture

  • Step 2 Peel the cucumber dark green skin off and either use a vegetable peeler to slice long strips of cucumber or cut very thinly.

  • Divide between 3 bread slices. Top with remaining slices

  • Step 3 Trim crusts

  • Cut each sandwich into 3 fingers.
